Christian Mouysset

After graduating from Cambridge with a degree in computer science, Christian founded Hummus Bros, his chain of quick-service restaurants inspired by the ancient cuisine of the Levant, and grew it rapidly to six sites serving over 12,000 meals a week.

Over the past three years, he has combined his computer science expertise and years of food retail experience to co-found and run Tenzo, a cutting edge restaurant analytics company. The Tenzo platform gives large and multi-site restaurants a much-improved ability to get to the insights and recommendations that will drive top-line growth and optimize costs. It also forecasts sales using machine learning, allowing restaurants to drastically reduce food waste.

Co-Founder, TopSource

Guil Hastings

Guil Hastings is the CEO and co-founder of TopSource, a global employment specialist with more than 1,000 clients. TopSource has supported payroll solutions for UK leisure sector businesses for 15 years, and has recently helped clients to adapt to the UK furlough programme. Guil has a Bachelor of Arts from the University of Pennsylvania and was a Professor at the Shanghai Jiao Tong University for almost two years.

James McLean

James has an extensive range of experience in supporting the operational development of projects. A passionate and experienced chef, he has supported the development, set-up,
and management at high-volume operations, Michelin-starred restaurants and renowned gastropubs.

James’s experience has included time as the operations director growing multi-site restaurant company. As Operations Director for Truffle Hunting James’s role offers support in concept development, F&B, operational management and business development for a variety of clients, from independent Michelin-starred restaurants to hotels and destination pubs.

James also works alongside his clients to develop their business plans, operating strategies and cloud-based ‘Ecosystems’ ensuring such controls provide clients clear and real time analysis of performance and direction.

Co-Founder and Commercial Director, Morso

Barak Peled

A business entrepreneur with a strong hospitality and operations background, Barack is the Founder and Co-Founder of a number of successful business concepts.

Barak is the Co-Founder and Commercial Director at Morso - London's modern, community-centred restaurant and bar, serving hand-crafted fresh pasta and small plates of Italian bites alongside innovative Grappa-based cocktails.

Using cloud-technology, Barak is experienced in setting up, rolling out and managing large, multi-site operations for businesses throughout the hospitality industry, consulting on budgeting, planning, funding and execution.

HR Director, YO! Sushi

Alyson Hancock

Alyson Hancock is the HR Director at YO!, a unique conveyor belt restaurant serving Japanese street food and sushi, with locations across the UK, Europe, Middle East and Australia.

A true hospitality professional, Alyson has been in the industry for more than 20 years and has lived and worked extensively across the Middle East, Asia and the UK.

In a departure from operations, Alyson gave into her love of people and moved into HR. She now leads the People function at YO! championing the culture of the business and is passionate about the development and wellbeing of over 1800 Team Members – a career highlight being the winner of the 2019 Sustainable Restaurant Associations ‘Treat Staff Fairly’ Award.

Alyson has a BA (Hons) in Business Management and Administration from the University of Lincolnshire and Humberside.
